Corn Salad

(Valerianella spp.) - a.k.a. mâche, lamb's lettuce, and white pot herb. This small rosette salad green has a mild, nutty taste, is easy to grow and has many nutrients, including three times as much vitamin C as lettuce, beta-carotene, B6, B9, vitamin E, potassium, calcium, magnesium and omega-3 fatty acids. It is best if gathered before flowers appear. It is a cool weather crop that matures in about 60 days.
